Ingredients

  • 4 Eggs
  • 1 Salt and pepper to taste
  • 2 Zucchini
  • 200 ml Cream
  • 200 g Spinach
  • 1 Fresh basil
  • 2 Red bell peppers
  • 200 g Goat cheese

Instructions

    Preheat oven to 160°C. Line a terrine with plastic wrap.

    Whisk eggs with cream, season well.

  3. 3

    Layer zucchini, peppers, spinach, cheese and basil in terrine.

    Pour egg mixture over.

    Cover and bake in water bath for 1 hour.

  6. 6

    Cool completely, refrigerate overnight.

  7. 7

    Unmold, slice and serve with salad.
