Ingredients
- 3 tablespoons Olive oil
- 2 Onion
- 200 ml Beef stock
- 750 ml Red wine
- 3 Carrots
- 4 Tomatoes
- 200 g Bacon lardons
- 1.5 kg Beef chuck
- 1 Orange zest
- 100 g Black olives
- 1 Bouquet garni
Instructions

Marinate beef in wine with herbs overnight.

Brown bacon and beef in batches. Set aside.

Sauté onions and carrots until soft.

Return meat to pot. Add marinade, stock, tomatoes and orange zest.

Cover and cook in 150°C oven for 3-4 hours until very tender.

Add olives in last 30 minutes.

Serve with fresh pasta or mashed potatoes.
