- 4 cloves Garlic
- 3 Tomatoes
- 1 Fresh basil
- 1 Fresh thyme
- 2 Yellow squash
- 1 Eggplant
Instructions

Preheat oven to 190°C.

Brush a baking dish with olive oil and garlic.

Arrange vegetable slices in alternating rows, standing upright.

Drizzle with olive oil. Season with thyme, salt and pepper.

Cover with foil. Bake 40 minutes.

Remove foil. Bake 20 minutes more until tender.

Garnish with fresh basil.
