Ingredients
- 1 pinch Salt and pepper to taste
- 1 Egg
- 500 ml Water
- 200 g Buckwheat flour
- 1 For filling: 4 eggs

Mix flour, water, egg and salt. Rest 1 hour.

Heat a large crêpe pan, butter lightly.

Pour thin layer of batter, swirl to coat pan.

Cook until edges lift, flip briefly.

Add ham, cheese and crack an egg in center.

Fold edges toward center, leaving egg visible.

Cook until egg is set.

Serve immediately.
