Ingredients

- 150 g Butter
- 200 g Sugar
- 1 Sweet tart shell
- 4 Lemons
- 1 Meringue: 3 egg whites

Make lemon curd: whisk lemon juice, zest, sugar and eggs over double boiler.

Cook, stirring, until thick. Remove from heat.

Whisk in butter until smooth. Cool slightly.

Pour into tart shell. Refrigerate until set.

Make meringue: beat whites, gradually adding sugar to stiff peaks.

Top tart with meringue, creating peaks.
