Éclair au Chocolat

Ingredients

  • 1 Choux pastry: 125ml water
  • 1 Chocolate pastry cream: 500ml milk
  • 1 Glaze: 100g dark chocolate

Instructions

    Make choux pastry. Pipe 10cm logs on baking sheet.

    Bake at 200°C for 25-30 minutes until golden.

    Make pastry cream, add chopped chocolate while hot. Cool.

    Make glaze by melting chocolate with butter and syrup.

  5. 5

    Poke holes in bottom of éclairs. Pipe in pastry cream.

  6. 6

    Dip tops in chocolate glaze.

  7. 7

    Refrigerate until set.
