Ingredients
- 1 Choux pastry: 125ml water
- 1 Chocolate pastry cream: 500ml milk
- 1 Glaze: 100g dark chocolate

Make choux pastry. Pipe 10cm logs on baking sheet.

Bake at 200°C for 25-30 minutes until golden.

Make pastry cream, add chopped chocolate while hot. Cool.

Make glaze by melting chocolate with butter and syrup.

Poke holes in bottom of éclairs. Pipe in pastry cream.

Dip tops in chocolate glaze.

Refrigerate until set.
