Ingredients
- 2 tablespoons Olive oil
- 4 Eggs
- 1 Salt and pepper to taste
- 1 Onion
- 2 cloves Garlic
- 4 Tomatoes
- 1 Fresh basil
- 2 Red bell peppers
- 2 Green bell peppers
- 1 pinch Espelette pepper
Instructions

Sauté onion and peppers in olive oil until soft, about 15 minutes.

Add garlic and tomatoes. Cook 10 minutes until saucy.

Season with Espelette pepper, salt and pepper.

Beat eggs and pour over vegetables. Stir gently until just set.

Garnish with basil.

Serve with crusty bread.
