Ingredients

  • 1 For meringues: 4 egg whites
  • 1 For crème anglaise: 4 egg yolks
  • 1 For caramel: 100g sugar

Instructions

    Make crème anglaise: heat milk with vanilla. Whisk yolks and sugar. Temper, return to heat, cook until thick. Chill.

    Beat egg whites, gradually adding sugar until stiff peaks form.

    Shape meringues with spoons. Poach in simmering milk 2 minutes each side.

    Make caramel: cook sugar and water until golden.

    Pour crème anglaise into bowls. Float meringues on top.

    Drizzle with caramel.

    Serve chilled.
