Soufflé au Fromage

Ingredients
- 1 Salt and pepper to taste
- 250 ml Milk
- 60 g Butter
- 5 Egg whites
- 60 g Flour
- 1 pinch Nutmeg
- 4 Egg yolks
- 150 g Gruyère cheese
- 1 pinch Cream of tartar

Preheat oven to 200°C. Butter ramekins and dust with cheese.

Make béchamel with butter, flour and milk.

Remove from heat. Stir in cheese, nutmeg, salt, pepper and egg yolks.

Beat egg whites with cream of tartar to stiff peaks.

Fold one-third whites into cheese mixture to lighten.

Gently fold in remaining whites.

Fill ramekins three-quarters full.

Bake 20-25 minutes until puffed and golden. Serve immediately.
