Ingredients

  • 4 tablespoons Olive oil
  • 4 Eggs
  • 4 slices Bread
  • 1 Salt and pepper to taste
  • 1 tablespoon Dijon mustard
  • 150 g Bacon lardons
  • 3 tablespoons Red wine vinegar
  • 200 g Frisée lettuce
  • 1 Shallot

Instructions

    Cook bacon until crispy. Remove and drain, reserve fat.

    Fry bread cubes in bacon fat until golden. Drain.

    Poach eggs in simmering water with vinegar.

  4. 4

    Whisk vinegar, mustard, shallot and oil for dressing.

  5. 5

    Toss frisée with warm dressing.

  6. 6

    Top with bacon, croutons and poached egg.

  7. 7

    Season and serve immediately.
