Ingredients

  • 1 Dijon mustard
  • 4 Carrots
  • 4 Leeks
  • 1 Coarse salt
  • 1 Onion studded with cloves
  • 1 Bouquet garni
  • 1 kg Beef brisket
  • 500 g Beef short ribs
  • 500 g Beef marrow bones
  • 4 Turnips
  • 1 Celery root
  • 1 Cornichons

Instructions

    Place meats and bones in large pot. Cover with cold water.

    Bring to simmer slowly, skimming foam frequently.

  3. 3

    Add onion and bouquet garni. Simmer 2 hours.

  4. 4

    Add carrots, turnips and celery root. Simmer 1 hour.

  5. 5

    Add leeks. Simmer 30 minutes more.

  6. 6

    Serve broth first as soup.

  7. 7

    Serve meats and vegetables with coarse salt, cornichons and mustard.
