Ingredients

  • 4 tablespoons Olive oil
  • 1 Salt and pepper to taste
  • 1 kg Onion
  • 1 Fresh thyme
  • 12 Anchovy fillets
  • 1 Pizza dough or puff pastry
  • 24 Niçoise olives

Instructions

    Cook onions slowly in olive oil for 45 minutes until very soft and caramelized.

    Season with thyme, salt and pepper. Cool.

    Preheat oven to 200°C.

    Roll out dough and place on baking sheet.

    Spread onion mixture evenly over dough.

    Arrange anchovies in a lattice pattern. Dot with olives.

  7. 7

    Bake 20-25 minutes until crust is golden.

    Serve warm or at room temperature.
