Ingredients
- 2 tablespoons Olive oil
- 1 Lemon
- 60 g Butter
- 1 Whole chicken
- 1 Fresh rosemary
- 1 Fresh thyme sprigs
- 1 Coarse salt
- 1 Black pepper
- 1 Head garlic

Preheat oven to 220°C.

Pat chicken dry. Season cavity with salt and pepper.

Stuff with lemon, garlic and half the herbs.

Rub butter under and over the skin. Drizzle with olive oil.

Season generously with salt and pepper.

Roast 20 minutes, then reduce to 190°C and roast 50-60 minutes more.

Rest 15 minutes before carving.

Serve with pan juices and remaining fresh herbs.
