Soupe à l'Oignon Gratinée

Ingredients

  • 1 Salt and pepper to taste
  • 60 g Butter
  • 1.5 l Vegetable stock
  • 1 tablespoon Flour
  • 1 Bay leaf
  • 1 Fresh thyme
  • 5 Large onions
  • 200 ml Dry white wine
  • 200 g Gruyère cheese
  • 8 slices Baguette

Instructions

    Melt butter in a large pot over medium-low heat.

    Add onions and cook slowly for 45-60 minutes, stirring occasionally, until deeply golden.

    Sprinkle flour over onions, stir and cook 2 minutes.

    Add wine, stock, bay leaf and thyme. Simmer 15 minutes.

    Season with salt and pepper.

    Ladle into oven-safe bowls, top with baguette slices and cheese.

    Broil until cheese is bubbling and golden.

    Serve immediately.
