Crème Brûlée

Ingredients

  • 1 pinch Salt and pepper to taste
  • 100 g Sugar
  • 6 Egg yolks
  • 500 ml Heavy cream
  • 1 Vanilla bean

Instructions

    Preheat oven to 150°C.

    Heat cream with vanilla bean until just simmering. Remove from heat, steep 15 minutes.

    Whisk egg yolks with sugar and salt until pale.

    Slowly pour warm cream into yolks, whisking constantly.

    Strain mixture into ramekins.

    Bake in a water bath for 40-45 minutes until set but jiggly in center.

    Refrigerate at least 4 hours or overnight.

    Before serving, sprinkle with sugar and caramelize with a torch.
