Chocolate Mousse

Ingredients
- 4 Eggs
- 1 pinch Salt and pepper to taste
- 50 g Sugar
- 200 ml Heavy cream
- 200 g Dark chocolate
- 1 Whipped cream for topping

Melt chocolate over a double boiler. Let cool slightly.

Whisk egg yolks with half the sugar until pale.

Fold melted chocolate into egg yolk mixture.

Whip cream to soft peaks and fold into chocolate mixture.

Beat egg whites with salt until foamy, gradually add remaining sugar, beat to stiff peaks.

Gently fold egg whites into chocolate mixture.

Divide among serving glasses and refrigerate at least 4 hours.

Top with whipped cream before serving.
