Ingredients
- 4 tablespoons Olive oil
- 4 Eggs
- 1 Salt and pepper to taste
- 1 Red onion
- 1 teaspoon Dijon mustard
- 400 g Fresh tuna steaks
- 200 g Green beans
- 400 g Small potatoes
- 200 g Cherry tomatoes
- 100 g Black olives
- 4 Anchovy fillets
- 1 Mixed salad greens
- 2 tablespoons Red wine vinegar

Boil potatoes until tender. Blanch green beans. Hard-boil eggs.

Season tuna with salt and pepper. Sear 2 minutes each side for medium-rare.

Whisk olive oil, vinegar and mustard for dressing.

Arrange salad greens on a platter. Top with potatoes, beans, tomatoes, olives and onion.

Slice tuna and eggs, arrange on salad.

Top with anchovies and drizzle with dressing.

Serve immediately.
