Ingredients

  • 4 tablespoons Olive oil
  • 2 Onion
  • 4 cloves Garlic
  • 300 g Prawns
  • 4 Tomatoes
  • 1 Leek
  • 1 Fresh parsley
  • 2 Bay leaves
  • 250 ml Dry white wine
  • 500 g Firm white fish
  • 500 g Mussels
  • 200 g Scallops
  • 1 Fennel bulb
  • 1 l Fish stock
  • 1 teaspoon Saffron threads
  • 1 Orange zest
  • 1 Crusty bread for serving

Instructions

    Sauté onions, fennel and leek in olive oil until soft.

    Add garlic, tomatoes, saffron, bay leaves and orange zest.

    Pour in wine and stock, bring to a simmer.

    Add firm fish first, cook for 5 minutes.

    Add mussels, prawns and scallops. Cover and cook 5-7 minutes until mussels open.

    Season with salt and pepper, garnish with parsley.

    Serve in deep bowls with crusty bread and rouille.
