Ingredients

  • 1 Salt and pepper to taste
  • 2 Onion
  • 100 g Breadcrumbs
  • 4 cloves Garlic
  • 300 g Pork belly
  • 1 l Chicken stock
  • 200 g Bacon lardons
  • 2 Bay leaves
  • 1 Fresh thyme sprigs
  • 500 g Dried white beans
  • 4 Duck confit legs
  • 4 Toulouse sausages
  • 400 g Canned tomatoes

Instructions

    Drain beans and simmer in stock with bay leaves until almost tender, about 1 hour.

    Brown pork belly and bacon in a Dutch oven. Set aside.

    Brown sausages and duck legs. Set aside.

    Sauté onions until soft, add garlic and tomatoes.

  5. 5

    Layer beans, meats and sauce in a deep casserole dish.

    Top with breadcrumbs and bake at 150°C for 2-3 hours.

    Break the crust occasionally and press down, allowing new crust to form.

    Serve hot with crusty bread.
