Ingredients

  • 4 tablespoons Olive oil
  • 1 Salt and pepper to taste
  • 1 Onion
  • 4 Zucchini
  • 4 cloves Garlic
  • 1 Fresh basil leaves
  • 4 Tomatoes
  • 1 Fresh thyme sprigs
  • 2 Eggplants
  • 2 Yellow squash
  • 1 Red bell pepper
  • 1 Yellow bell pepper
  • 400 g Canned crushed tomatoes

Instructions

    Preheat oven to 190°C.

    Sauté onion and bell peppers until soft. Add garlic and cook 1 minute.

    Add crushed tomatoes and spread in a baking dish as the base.

    Arrange sliced vegetables in alternating pattern over the sauce.

    Drizzle with olive oil, season with salt, pepper and fresh thyme.

    Cover with foil and bake for 40 minutes.

    Remove foil and bake another 20 minutes until vegetables are tender.

    Garnish with fresh basil and serve warm.
