Ingredients
- 1 Salt and pepper to taste
- 1 tablespoon Dijon mustard
- 1 pinch Nutmeg
- 200 g Bacon lardons
- 200 g Gruyère cheese
- 1 Pre-made shortcrust pastry
- 4 Large eggs
- 300 ml Heavy cream
- 150 ml Whole milk
Instructions

Preheat oven to 190°C. Line a tart pan with pastry and blind bake for 15 minutes.

Cook bacon lardons until crispy, drain on paper towels.

Whisk together eggs, cream, milk, mustard, nutmeg, salt and pepper.

Scatter bacon and half the cheese over the pastry base.

Pour in egg mixture and top with remaining cheese.

Bake for 30-35 minutes until golden and set.

Let rest for 10 minutes before slicing. Serve warm or at room temperature.
