French Onion Soup

Ingredients
- 2 tablespoons Olive oil
- 1 Salt and pepper to taste
- 4 tablespoons Butter
- 2 cloves Garlic
- 1 teaspoon Sugar
- 2 Bay leaves
- 1 Fresh thyme sprigs
- 6 Large onions
- 250 ml Dry white wine
- 1.5 l Beef or vegetable stock
- 8 slices French baguette
- 200 g Gruyère cheese
Instructions

Melt butter with oil in a large pot over medium heat.

Add onions and sugar, cook for 45-60 minutes, stirring occasionally, until deeply caramelized.

Add garlic and cook for 1 minute.

Pour in wine and scrape up any browned bits. Simmer until reduced by half.

Add stock, bay leaves and thyme. Simmer for 20 minutes.

Toast baguette slices and top with grated Gruyère.

Ladle soup into oven-safe bowls, top with cheese-covered bread.

Broil until cheese is bubbly and golden. Serve immediately.
