Ingredients

  • 1 Salt and pepper to taste
  • 3 tablespoons Butter
  • 500 ml Beef stock
  • 2 tablespoons Tomato paste
  • 4 cloves Garlic
  • 2 Carrots
  • 3 tablespoons Flour
  • 200 g Bacon lardons
  • 500 g Button mushrooms
  • 24 Pearl onions
  • 750 ml Red burgundy wine
  • 2 Bay leaves
  • 1 Fresh thyme sprigs
  • 1.5 kg Beef chuck

Instructions

    Pat beef dry and season with salt and pepper. Brown in batches in a Dutch oven with oil.

    Cook bacon until crispy, then sauté onions, carrots and mushrooms.

    Add garlic and tomato paste, cook briefly.

    Sprinkle flour over and stir to coat.

    Add wine, stock, bay leaves and thyme. Return beef to pot.

    Cover and braise in a 160°C oven for 3 hours until beef is fork-tender.

    Skim any fat, adjust seasoning, and serve with buttered egg noodles.
