Ingredients
- 1 Salt and pepper to taste
- 2 tablespoons Butter
- 2 tablespoons Tomato paste
- 2 cloves Garlic
- 500 ml Chicken stock
- 1 Whole chicken
- 2 tablespoons Flour
- 200 g Bacon lardons
- 250 g Button mushrooms
- 12 Pearl onions
- 750 ml Red burgundy wine
- 2 Bay leaves
- 1 Fresh thyme sprigs
Instructions

Season chicken pieces with salt and pepper. Brown in a large Dutch oven with butter, then set aside.

Add bacon lardons and cook until crispy. Remove and set aside.

Sauté pearl onions until golden, then add mushrooms and cook for 5 minutes.

Add garlic and tomato paste, cook for 1 minute.

Sprinkle flour over vegetables and stir well.

Pour in wine and chicken stock, add bay leaves and thyme.

Return chicken and bacon to the pot. Bring to a simmer.

Cover and cook in a 160°C oven for 1.5-2 hours until chicken is tender.

Adjust seasoning and serve with crusty bread or mashed potatoes.
