Ingredients

  • 3 Eggs
  • 175 g Butter
  • 225 g Plain flour
  • 400 g Mixed dried fruit
  • 1 teaspoon Mixed spice
  • 175 g Soft brown sugar
  • 500 g Marzipan
  • 1 Apricot jam

Instructions

    Cream butter and sugar. Beat in eggs.

    Fold in flour, spice and fruit.

  3. 3

    Put half in tin, add disc of marzipan, then remaining mixture.

  4. 4

    Bake at 150°C for 2.5 hours.

    Cool. Brush with jam, top with marzipan. Toast under grill.
