Ingredients

  • 4 Eggs
  • 50 g Butter
  • 1 Onion
  • 1 Lemon wedges
  • 2 teaspoons Curry powder
  • 300 g Smoked haddock
  • 1 Fresh parsley
  • 250 g Basmati rice

Instructions

    Poach haddock in water. Flake and set aside.

    Cook rice according to package.

  3. 3

    Fry onion in butter with curry powder.

  4. 4

    Add rice and fish. Toss to combine.

  5. 5

    Quarter eggs, fold into kedgeree.

  6. 6

    Garnish with parsley, serve with lemon.
