Ingredients

  • 1 Egg
  • 4 tbsp Milk
  • 200 g Self-raising flour
  • 100 g Butter
  • 100 g Golden syrup
  • 100 g Soft brown sugar
  • 100 g Black treacle
  • 100 g Oatmeal
  • 2 tsp Ground ginger

Instructions

    Preheat the oven to 140C/120C Fan/Gas 1. Grease and line a 20cm square tin.

    Melt the butter, treacle, syrup, and sugar in a pan.

    In a large bowl, mix the oatmeal, flour, and ginger.

    Pour the melted mixture into the dry ingredients and mix well.

  5. 5

    Beat the egg with the milk and stir it in.

  6. 6

    Pour the mixture into the prepared tin.

    Bake for 1-1.5 hours, until firm.

    Cool in the tin. The parkin is best left for a few days to become sticky.
