Ingredients
- 1 Egg
- 250 ml Milk
- 50 g Caster sugar
- 50 g Butter
- 0 For the filling:
- 150 g Currants
- 1 tsp Mixed spice
- 75 g Soft brown sugar
- 500 g Strong white bread flour
- 7 g Dried yeast

In a large bowl, mix the flour, sugar, and yeast.

Make a well in the centre and add the milk, egg, and melted butter. Mix to a soft dough.

Knead for 10 minutes until smooth and elastic. Leave to rise in a warm place for 1 hour.

Roll out the dough to a rectangle.

For the filling, spread the softened butter over the dough. Sprinkle with the sugar, currants, and mixed spice.

Roll up the dough tightly and cut into 9 slices.

Place the slices in a greased and lined 23cm square tin. Leave to rise for 30 minutes.

Preheat the oven to 190C/170C Fan/Gas 5.

Bake for 20-25 minutes, until golden.

While still warm, brush with a sugar glaze.
