Ingredients

  • 2 Eggs
  • 125 g Caster sugar
  • 125 g Butter
  • 1 sheet Shortcrust pastry
  • 4 tbsp Raspberry jam
  • 25 g Flaked almonds
  • 125 g Ground almonds
  • 0.5 tsp Almond extract

Instructions

    Preheat the oven to 180C/160C Fan/Gas 4. Line a 20cm tart tin with the pastry.

    Spread the jam over the base of the pastry case.

    Cream the butter and sugar until light and fluffy. Beat in the eggs one at a time.

    Stir in the ground almonds and almond extract.

  5. 5

    Spoon the mixture into the pastry case and level the surface.

  6. 6

    Sprinkle with flaked almonds.

    Bake for 35-40 minutes, until golden and firm to the touch.

    Cool before serving.
