Ingredients
- 1 tbsp Caster sugar
- 25 g Butter
- 375 g Puff pastry
- 100 g Currants
- 0.5 tsp Mixed spice
- 25 g Mixed peel
- 50 g Soft brown sugar
- 1 Egg white

Preheat the oven to 220C/200C Fan/Gas 7.

Roll out the pastry and cut out 8 rounds.

Melt the butter and stir in the currants, peel, sugar, and spice.

Spoon the filling into the centre of each pastry round.

Brush the edges with water and bring them together to enclose the filling.

Turn the cakes over and flatten them slightly.

Brush with egg white and sprinkle with caster sugar.

Make three slits in the top of each cake.

Bake for 12-15 minutes, until golden.
