Ingredients
- 1 Egg
- 225 g Self-raising flour
- 450 g Mixed dried fruit
- 300 ml Hot tea
- 150 g Light muscovado sugar
- 1 tsp Mixed spice
Instructions

Soak the dried fruit in the hot tea overnight.

Preheat the oven to 150C/130C Fan/Gas 2. Grease and line a loaf tin.

Stir the flour, sugar, and mixed spice into the fruit mixture.

Beat the egg and stir it in.

Pour the mixture into the prepared tin.

Bake for 1.5 hours, until a skewer inserted into the centre comes out clean.

Cool in the tin for 10 minutes before turning out onto a wire rack.

Serve sliced and buttered.
