Ingredients
- 1 Egg
- 225 g Self-raising flour
- 75 g Caster sugar
- 100 g Butter
- 50 g Currants
Instructions

Rub the butter into the flour until the mixture resembles breadcrumbs.

Stir in the sugar and currants.

Beat the egg and add to the mixture to form a dough.

Roll out the dough on a floured surface to about 5mm thick.

Cut out rounds with a cutter.

Cook on a lightly greased griddle or heavy-based frying pan for 2-3 minutes on each side, until golden.

Sprinkle with caster sugar while still warm.
