Ingredients

  • 4 Eggs
  • 200 g Self-raising flour
  • 200 g Caster sugar
  • 200 g Butter
  • 1 tsp Baking powder
  • 1 tbsp Icing sugar
  • 150 ml Double cream
  • 4 tbsp Strawberry jam

Instructions

    Preheat the oven to 180C/160C Fan/Gas 4. Grease and line two 20cm sandwich tins.

    Cream the butter and sugar until light and fluffy. Beat in the eggs one at a time.

    Fold in the flour and baking powder.

    Divide the mixture between the prepared tins.

  5. 5

    Bake for 20-25 minutes, until golden and the sponges spring back when pressed.

    Cool on a wire rack.

    Sandwich the sponges together with jam and cream.

  8. 8

    Dust with icing sugar before serving.
