Sticky Toffee Pudding

Ingredients

  • 2 Eggs
  • 175 g Self-raising flour
  • 150 g Caster sugar
  • 50 g Butter
  • 175 ml Boiling water
  • 1 tsp Bicarbonate of soda
  • 200 ml Double cream
  • 175 g Dates
  • 0 For the sauce:
  • 175 g Dark muscovado sugar

Instructions

    Preheat the oven to 180C/160C Fan/Gas 4. Grease and line a baking dish.

    Put the dates in a bowl, sprinkle with the bicarbonate of soda and pour over the boiling water. Leave to stand for 20 minutes.

    Cream the butter and sugar until light and fluffy. Beat in the eggs one at a time.

    Fold in the flour, then the date mixture.

    Pour into the prepared dish and bake for 30-35 minutes.

    For the sauce, melt the butter, sugar and cream in a pan. Bring to the boil and simmer for 2-3 minutes.

    Pour half the sauce over the pudding and serve the rest on the side.
