Mushroom Risotto

Ingredients

  • 1 tbsp Olive oil
  • 1 Onion
  • 700 ml Vegetable stock
  • 1 tbsp Parsley
  • 100 ml White wine
  • 250 g Mushrooms
  • 150 g Risotto rice
  • 50 g Parmesan cheese

Instructions

    Heat the oil in a pan and cook the onion until soft.

    Add the mushrooms and cook until browned.

  3. 3

    Stir in the rice and cook for 1 minute.

  4. 4

    Pour in the wine and cook until it has been absorbed.

  5. 5

    Add the stock a ladleful at a time, stirring until it has been absorbed before adding the next.

  6. 6

    Continue until all the stock has been used and the rice is cooked.

  7. 7

    Stir in the Parmesan and parsley.

  8. 8

    Season and serve.
