Ingredients

  • 1 handful Parsley
  • 3 Carrots
  • 500 g Potatoes
  • 1 small Swede
  • 2 Leeks
  • 1 kg Lamb neck on the bone

Instructions

    Put the lamb in a large pan with 2 litres of water. Bring to the boil and skim off any scum.

    Reduce the heat, cover and simmer for 2 hours.

  3. 3

    Add the potatoes, carrots, and swede. Simmer for 20 minutes.

  4. 4

    Add the leeks and simmer for a further 10 minutes.

  5. 5

    Remove the lamb from the pan. Carve the meat from the bones and return the meat to the pan.

    Stir in the parsley and season to taste.

  7. 7

    Serve hot with crusty bread and Caerphilly cheese.
