Ingredients

  • 50 g Butter
  • 2 Onion
  • 2 Carrots
  • 1 kg Potatoes
  • 900 g Lamb neck fillets
  • 500 ml Lamb stock

Instructions

    Preheat the oven to 160C/140C Fan/Gas 3.

    Layer the lamb, onions, and carrots in a casserole dish.

  3. 3

    Pour over the stock.

  4. 4

    Arrange the potato slices on top, overlapping them.

  5. 5

    Dot with butter.

  6. 6

    Cover and bake for 1.5 hours.

  7. 7

    Remove the lid and bake for a further 30 minutes, until the potatoes are golden.
