Ingredients

  • 4 Carrots
  • 1.5 kg Potatoes
  • 1.5 kg Beef joint
  • 4 Parsnips
  • 1 batch Yorkshire pudding batter
  • 1 batch Gravy

Instructions

    Preheat the oven to 220C/200C Fan/Gas 7.

    Place the beef in a roasting tin and cook for 20 minutes.

  3. 3

    Reduce the oven temperature to 180C/160C Fan/Gas 4 and cook for a further 1.5-2 hours, depending on how you like your beef cooked.

    About 45 minutes before the end of the cooking time, add the potatoes, carrots, and parsnips to the roasting tin.

    20 minutes before the end of the cooking time, cook the Yorkshire puddings.

  6. 6

    Once the beef is cooked, remove it from the oven and rest for 20 minutes.

    Make the gravy using the meat juices from the roasting tin.

  8. 8

    Carve the beef and serve with the roast vegetables, Yorkshire puddings, and gravy.
