Ingredients

  • 2 tbsp Olive oil
  • 1 pinch Salt and pepper to taste
  • 1 Onion
  • 500 ml Vegetable stock
  • 2 Garlic
  • 1 tsp Sugar
  • 800 g Chopped tomatoes

Instructions

    Heat the oil in a large saucepan.

    Add the onion and garlic and cook for 5 minutes until softened.

    Add the tomatoes, stock, and sugar.

    Bring to the boil, then simmer for 20 minutes.

    Blend the soup until smooth.

    Season to taste.

    Serve hot with crusty bread.
