Ingredients
- 1 Egg
- 300 ml Milk
- 1 tbsp Caster sugar
- 2 tbsp Butter
- 1 tsp Baking powder
- 200 g Gluten-free self-raising flour

In a large bowl, whisk together the flour, sugar, and baking powder.

In a separate bowl, whisk the egg and milk.

Pour the wet ingredients into the dry ingredients and whisk until just combined.

Stir in the melted butter.

Heat a lightly oiled frying pan over a medium heat.

Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake.

Cook for 2-3 minutes on each side, until golden brown.

Serve with your favourite toppings.
