Ingredients

  • 1/4 cup Honey
  • 125 g Butter
  • 1/2 cup Plain flour
  • 1/2 cup Desiccated coconut
  • 1 cup Rolled oats
  • 1/2 cup Brown sugar
  • 1/2 cup Chopped dried apricots
  • 1/4 cup Sunflower seeds
  • 1/4 cup Pumpkin seeds

Instructions

    Preheat oven to 180°C. Grease a 24-hole mini muffin pan.

    In a large bowl, combine the oats, flour, sugar, coconut, apricots and seeds.

    In a separate bowl, combine the melted butter and honey.

    Pour the wet ingredients into the dry ingredients and mix to combine.

    Press tablespoons of the mixture into the prepared muffin pan.

    Bake for 10-12 minutes, until golden.

    Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
