Ingredients

  • 125 g Butter
  • 1/2 cup Lemon juice
  • 1 1/2 cups Boiling water
  • 1 For the topping:
  • 1 For the base:
  • 1 packet Plain sweet biscuits
  • 1 For the filling:
  • 395 g Can sweetened condensed milk
  • 3 teaspoons Gelatine
  • 1 packet Raspberry jelly crystals

Instructions

    For the base, combine the crushed biscuits and melted butter. Press into the base of a lined 20cm x 30cm slice pan. Refrigerate.

    For the filling, combine the condensed milk and lemon juice in a bowl. Whisk in the dissolved gelatine.

    Pour the filling over the biscuit base and refrigerate for 1-2 hours, until set.

    For the topping, dissolve the jelly crystals in the boiling water. Allow to cool to room temperature.

    Gently pour the jelly over the set filling.

    Refrigerate for at least 4 hours, or until the jelly is firm.

    Cut into slices to serve.
