Anzac Biscuits

Ingredients

  • 125 g Butter
  • 1 tablespoon Water
  • 1 cup Plain flour
  • 1 cup Desiccated coconut
  • 1 cup Rolled oats
  • 3/4 cup Brown sugar
  • 2 tablespoons Golden syrup
  • 1/2 teaspoon Bicarbonate of soda

Instructions

    Preheat oven to 160°C. Line two baking trays with baking paper.

    In a bowl, combine the flour, oats, coconut and sugar.

    In a small saucepan, melt the butter, golden syrup and water over low heat.

    Stir in the bicarbonate of soda (the mixture will foam up).

    Pour the wet ingredients into the dry ingredients and mix to combine.

    Roll tablespoons of the mixture into balls and place on the prepared trays, flattening slightly.

    Bake for 12-15 minutes, until golden.

    Cool on the trays for a few minutes before transferring to a wire rack to cool completely.
