Ingredients

  • 2 Eggs
  • 1/2 cup Milk
  • 1 1/2 cups Self-raising flour
  • 1 cup Caster sugar
  • 125 g Butter
  • 1 For the cake:
  • 1 For the icing:
  • 4 cups Icing sugar
  • 1/3 cup Cocoa powder
  • 2 cups Desiccated coconut

Instructions

    Preheat oven to 180°C. Grease and line a 20cm square cake pan.

    For the cake, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.

    Fold in the flour and milk in alternating batches until just combined.

    Pour the batter into the prepared pan and bake for 25-30 minutes, until a skewer inserted into the centre comes out clean.

    Cool completely before cutting into 12 squares.

    For the icing, combine the icing sugar, cocoa, butter and milk in a bowl and whisk until smooth.

    Dip each square of cake into the icing, then toss in coconut to coat.

    Place on a wire rack to set.
