Pavlova with Cream and Berries

Ingredients
- 1 cup Caster sugar
- 1 teaspoon Cornflour
- 4 Egg whites
- 1 teaspoon White vinegar
- 300 ml Thickened cream
- 2 cups Mixed berries (e.g. strawberries
- 1 Passionfruit pulp
Instructions

Preheat oven to 150°C. Line a baking tray with baking paper and draw a 20cm circle on it.

In a clean, dry bowl, beat the egg whites until stiff peaks form.

Gradually add the sugar, one tablespoon at a time, beating well after each addition, until the meringue is thick and glossy.

Fold in the vinegar and cornflour.

Spoon the meringue onto the prepared tray, within the circle, and shape into a nest.

Reduce oven temperature to 120°C and bake for 1 hour and 15 minutes, or until the pavlova is dry to the touch.

Turn off the oven and leave the pavlova to cool completely in the oven with the door ajar.

To serve, top the pavlova with whipped cream, berries and passionfruit pulp.
