Ingredients

  • 2 tablespoons Olive oil
  • 1 Lemon
  • 1.5 kg Whole chicken
  • 1 tablespoon Dried lemon myrtle

Instructions

    Preheat oven to 200°C.

    Rub the chicken with olive oil, lemon myrtle, salt and pepper.

    Place the lemon halves inside the chicken cavity.

    Place the chicken in a roasting pan and roast for 1 hour and 15 minutes, or until the juices run clear when the thigh is pierced.

    Rest for 10 minutes before carving.

    Serve with roasted vegetables.
