Green Chicken Curry

Ingredients

  • 1 Fresh coriander
  • 2 tablespoons Green curry paste
  • 400 ml Can coconut milk
  • 1 cup Chicken stock
  • 1 tablespoon Fish sauce
  • 1 teaspoon Sugar
  • 1 Steamed rice
  • 500 g Chicken thigh fillets
  • 1 cup Mixed vegetables (e.g. snow peas

Instructions

    Heat a little oil in a wok or large frying pan over medium-high heat. Add the curry paste and cook for 1 minute, until fragrant.

    Add the chicken and cook until browned.

    Stir in the coconut milk and chicken stock. Bring to a simmer.

    Add the vegetables and cook for 5-7 minutes, until tender.

    Stir in the fish sauce and sugar.

    Serve the curry with steamed rice and fresh coriander.
