Pork Roast with Crackling

Ingredients

  • 2 tablespoons Olive oil
  • 2 tablespoons Salt and pepper to taste
  • 2 kg Pork loin roast

Instructions

    Preheat oven to 220°C.

    Pat the pork skin dry with paper towel. Score the skin at 1cm intervals.

    Rub the skin with olive oil and sea salt, making sure the salt gets into the scores.

    Place the pork in a roasting pan and roast for 30 minutes.

    Reduce the oven temperature to 180°C and roast for a further 1.5 hours, or until the pork is cooked through.

    If the crackling is not crisp enough, you can place it under a hot grill for a few minutes, watching it carefully.

    Rest the pork for 15 minutes before carving. Serve with roasted vegetables and apple sauce.
