Mushroom Risotto

Ingredients

  • 1 tablespoon Olive oil
  • 2 tablespoons Butter
  • 1 Onion
  • 4 cups Vegetable stock
  • 2 cloves Garlic
  • 1/2 cup Grated parmesan cheese
  • 500 g Mixed mushrooms
  • 1 1/2 cups Arborio rice
  • 1/2 cup White wine

Instructions

    Heat olive oil in a large saucepan over medium heat. Cook the onion and garlic until soft.

    Add the mushrooms and cook until browned.

    Add the rice and stir for 1 minute to coat the grains.

    Pour in the wine and cook until it has been absorbed.

    Add the hot stock, one ladleful at a time, stirring until it has been absorbed before adding the next. Continue for 20-25 minutes, until the rice is creamy and cooked through.

    Stir in the parmesan and butter. Season with salt and pepper and serve.
