Lentil Shepherd's Pie

Ingredients

  • 2 tablespoons Olive oil
  • 1 Onion
  • 1 tablespoon Tomato paste
  • 1 cup Vegetable stock
  • 400 g Can chopped tomatoes
  • 2 Carrots
  • 2 Celery sticks
  • 1 For the topping:
  • 1 cup Brown lentils
  • 1 kg Sweet potatoes

Instructions

    For the topping, cook the sweet potatoes in boiling water until tender. Drain and mash with olive oil. Season with salt and pepper.

    For the filling, heat oil in a large saucepan over medium-high heat. Cook the onion, carrots and celery until soft.

    Add the lentils, chopped tomatoes and vegetable stock. Bring to a simmer, then reduce heat and cook for 20-25 minutes, until the lentils are tender and the sauce has thickened.

    Stir in the tomato paste.

    Preheat oven to 200°C. Spoon the filling into a baking dish.

    Top with the sweet potato mash.

    Bake for 20 minutes, or until the topping is golden.
